Original recipe yields 1 serving
7 lb figs
1 cup baking soda
6 quart s boiling water
1 quart vinegar
7 cups sugar
3 tsp each cinnamon and cloves tied up in cheesecloth

Leave steams on figs and wash thoroughly. Sprinkle baking soda over figs. Cover with boiling water and let stand 10 minutes. Rinse twice in cold, clear water and drain.

Place vinegar, sugar and spices in pan, bring to a boil and then add figs. Cook together about 30 minutes until figs are clear and transparent and syrup is a little thick. Remove cheesecloth spices.

Pack in jars using hot lids and process 10 minutes in boiling water bath.
