1 small onion, chopped
Egg substitute equivalent to 4 large eggs
1 cup biscuit mix
1/2 cup canola oil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup Velveeta Light cheese
1/4 cup Parmesan cheese
4 cups chopped zucchini (unpeeled)
