Original recipe yields 1 serving
1 can (8.5 oz.) cream style sweet corn
2 cans (14 oz.) low sodium chicken broth
1 boneless skinless chicken breast, cubed
2 teaspoon s cornstarch
Salt and pepper to taste
For Garnish:
2 tablespoons green onions, chopped (green part only)
Vinegar Chili as condiment:
1 Thai bird chili chopped fine (or 1 jalapeno for less heat)
2 tablespoons of regular cooking vinegar
1 teaspoon soy sauce
Mix these together and serve with the soup

Combine cream style corn, chicken broth and chicken pieces in a stock pot and bring to a boil. Then simmer for 15-20 minutes or until chicken is done.

Mix cornstarch in a tablespoon of water and add to the soup. Stir for a minute or two until the soup thickens (if you want a thin soup, then avoid the cornstarch). Season with salt and pepper.

Garnish with chopped green onions and serve hot with vinegar chili on the side.
