Original recipe yields 1 serving
1 1/4 C brown sugar
1/2 C cooking oil
1 egg
2 t vanilla
1 C Bryers yogurt
1 1/2 C diced rhubarb
1/2 C chopped walnuts
2 1/2 C flour
1 t baking soda
1 t baking powder
1/2 t salt
Topping
1/3 C sugar
1 t cinnamon

In large bowl put brown sugar, oil, egg, vanilla and yogurt, mix well. Stir in rhubarb and walnuts.

In smaller bowl combine flour, baking soda, baking powder and salt. Add this to rhubarb mixture. Pour batter into 3 sprayed small bread pans.

Combine sugar and cinnamon, spoon over top.

Bake at 350 for 35-40 min. Let cool 5 min. Remove to cooling rack. I place mine in freezer bags to store.
