Boil chicken on stovetop or roast in oven till done. (I find that boiling it on the stovetop covered is more convenient for me).
Cut cheese into chunks, melt into hot soup in Dutch oven, stirring until blended and cheese is completely melted. Stir in half-and-half, add chicken (removed from bone and in bite-sized pieces), then add cooked pasta.
Spray a large casserole dish with cooking spray and add mixture. Bake (covered) at 350°F till done, about 1 hour.
