Irish Potato Soup

5 medium potatoes
2 1/2 cups chicken stock
1 onion, chopped
2 Tbsp butter
2 Tbsp flour
1 1/4 cups milk
1 small box Velveeta
4 slices bacon, fried & crumbled
Salt & pepper
Sour cream
Chopped parsley

1. Boil potatoes in chicken stock.

2. Saute onion in butter for 4 minutes. Add flour & cook about 3 minutes.

3. Add to potatoes & use stick blender to mash potatoes & onion, until smooth.

4. Add milk, Velveeta & bacon. Heat until well blended.

5. Dish up in medium sized bowl. Add dollop of sour cream & sprinkle with parsley.
