Original recipe yields 1 serving
2 whole boneless skinless chicken breasts, cut into bite sized pieces
2 Tbsp olive oil
1 medium onion, minced
3 garlic cloves, minced
1- ½ cups chicken broth
1 lb tomatillos, husks and stems removed, finely chopped
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground dried oregano
1 can (4 oz.) green chili peppers, diced
1 jar (42 oz.) great northern beans
8 oz Monterey jack cheese, shredded

Let's Make It

In a frying pan, place the olive oil and chicken pieces. Sauté until cooked; place chicken in a large saucepan; set aside.

In the same frying pan, now place the onion and garlic. Sauté until tender (approx. 2 min.). Place in the saucepan with the chicken.

Add the broth, tomatillos, and dry seasonings. Bring to a boil then simmer for 20 minutes.

Add the chili peppers and beans – heat through.

Place shredded cheese on each individual serving.
