Mix dry ingredients together and then add beaten egg, skim milk, and oil.
This made 6 nice and fluffy 6 inch pancakes. You may have to increase milk if mix is too thick or flour if mix is too runny.
Cook in frying pan until brown on first side and then turn over to cook the other side.
