Original recipe yields 1 serving
5 lb corned beef brisket
1 lg. onion, coarsely chopped
6 whole cloves
6 carrots, peeled & sliced
8 potatoes, peeled & cubed
1 tsp dried thyme
1 small bunch of parsley
2 lb cabbage, cut into wedges
Freshly ground pepper
Sauce
1/2 pint whipped cream
2 Tbsp horseradish

1. Place beef in large pot. Cover with cold water & bring to a boil. Reduce heat to simmer and cook for 2 hrs. Skim fat as it rises to the top.

2. Add onions, cloves, carrots, potatoes, thyme, and parsley. Cook for another hour.

3. Remove parsley & whole cloves. Add cabbage, simmer 20 minutes.

4. Remove meat and slice, place on center of large platter. Strain vegetables, season heavily with black pepper, arrange vegetables around meat on platter.

5. Whip cream until stands in peaks. Fold in horseradish. Serve with meat.
