Original recipe yields 1 serving
1 lb okra, tender and each 2-4 inches long, cleaned
3/4 cup cornmeal
1/2 tsp salt
Vegetable oil (1/2 inch of oil per batch of okra)

1. Cut okra crosswise into 1/2 inch slices; set aside.

2. Combine cornmeal & salt. Dredge sliced okra in cornmeal mixture.

3. Cook in 1/2 inch oil over high heat until lightly browned, stirring occasionally. Drain on paper towel, serve immediately.
