6-8 Italian sausage, spicy or mild
2 Tbsp olive oil
4 large yellow onions, sliced
6 bell peppers (I like red, but any color will work), sliced
1 tsp sugar
Salt
Crushed red pepper optional

Remove skin from sausage, brown in a skillet.

While sausage is browning, add oil to large pot. Add onion and peppers, cook on medium heat stirring occasionally. When they begin to soften add sugar, salt to taste, and crushed red pepper.

Once meat is browned, add to top of vegetables. Turn down heat and let cook until vegetables are completely soft and meat is cooked through. Stir occasionally.
