Peel and boil potatoes until fork tender and drain.
Add and mix in butter, cream cheese, chopped onion, and salt and pepper to taste, and adding half-and-half as needed for mashed potato consistency. Place in casserole dish and sprinkle top with parmesan cheese.
Put in 350 degrees F oven and bake about 20 - 30 minutes or until top becomes firm.
