Original recipe yields 1 serving
1 cup sifted all-purpose flour
1/2 teaspoon salt
1/2 teaspoon sugar
2 eggs, lightly beaten
1/2 cup milk
Oil for frying
Type of Fritter:
1 cup finely chopped apples, about 3 to 4 cored and peeled
1 cup fresh corn kernels, about 4 ears shucked
1 cup minced clams- omit sugar from batter and add 1 Tablespoon finely minced onion

Use this basic fritter batter recipe to make apple, corn, and clam fritters, or as a base for fritters of your own culinary invention.

Heat oil in deep-fat fryer to 360ºF. In a large bowl, stir together the flour, salt and sugar. Add eggs and milk and whisk to blend. Stir in 1 cup of fritter type to the batter.

Drop by large spoonfuls into the hot oil and fry until golden brown. Remove and drain on paper towels.

Serve hot with the following:

Apple- dust with powdered sugar mixed with cinnamon

Corn- melted butter with salt and pepper or maple syrup

Clam- tartar sauce
