Fresh Apple Cake

Original recipe yields 1 serving
1 1/4 cups vegetable oil
2 cups sugar
3 eggs, beaten slightly
3 real ripe apples, peeled and sliced
3 cups flour
1 tsp salt
3 tsp cinnamon
1 tsp baking soda
2 tsp vanilla
1 cup chopped nuts (optional)
Icing:
1 cup sugar
1/2 stick oleo
1/4 cup evaporated milk
2 tsp vanilla
1/2 cup nuts (on top, optional)

Mix well the vegatable oil, sugar, slightly beaten eggs, and sliced apples. Sift together flour salt, cinnamon, and baking soda. Combine sifted mixture, vanilla, and chopped nuts with apple mixture; mix well.

Bake in a greased and floured tube pan or a 9x13 inch sheet cake pan, at 350 degrees for 1 hour.

Bring sugar, oleo, and evaporated milk to a rolling boil; add vanilla. Boil until it makes a soft ball. Cool, then spread on cool cake. Put nuts on top (optional).
