Original recipe yields 1 serving
2 eggs
4 slices bread, torn into pieces
2/3 cup milk
1/2 cup chopped onion
1/2 cup grated carrot
2 cups shredded mozzarella cheese
1 teaspoon salt
1 heaping teaspoon ground sage
1/4 teaspoon black pepper
1 heaping teaspoon dried parsley
2 pounds ground beef
TOPPING:
1/2 cup tomato sauce
1/2 cup brown sugar, packed
1 teaspoon prepared mustard

In a large bowl, beat eggs. Add bread and milk; let stand a few minutes or until the bread absorbs the liquid. Stir in the onion, carrot, cheese, herbs and seasoning. Add beef; mix well.

Shape beef mixture into a large (9 x 3) loaf pan.

Bake at 350F for 45 minutes. Combine topping ingredients. Spoon some of the topping over the meatloaf. Bake an additional 45 minutes or until no pink remains, occasionally spooning some of remaining topping over the loaf. Let stand 15 minutes before serving.
