1 cup sifted cake flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup shortening
3/4 cup white sugar
1 egg
1 1/4 teaspoon s lemon extract
1/2 cup cottage cheese, creamed

1. Preheat oven to 400 degrees F (205 degrees C). Sift together flour, baking powder and salt. Set aside. Mix until creamy shortening, sugar and egg. Add lemon extract. Mix in cottage cheese until smooth. Add flour mixture and mix just until blended.

2. Drop by teaspoonfuls 2 inches apart onto greased cookie sheet.

3. Bake 10 to 15 minutes, or until brown around the edges.
