Preheat oven to 350°F. In a small bowl or mixing cup, combine the dressing, crushed pineapple, soy sauce and garlic.
Place chicken breasts in a clear 9 X 13 baking dish and cover with the dressing mix. Bake for 30 min or until chicken is done.
Meanwhile, prepare the rice according to package directions. Scoop rice onto plate and top with chicken. Garnish with pineapple slice, if you choose.
