Cream shortening and brown sugar. Beat until light and fluffy. Add eggs and vanilla. Set aside.
Mix flour, baking soda and baking powder together. Add rolled oats and coconut. Add these dry ingredients to first mixture and blend well.
Roll into balls the size of large walnuts. Place 3" apart on lightly greased cookie sheet. Press flat with a floured fork.
Bake at 375°F for 8-10 minutes.
