Cook rice as directed but add the rice vinegar in place of some water.
While rice is cooking, mix together sour cream, diced green chiles, and salt and pepper to taste, set aside. Also grate all of pepper jack cheese, set aside.
Spray baking dish with cooking spray. Once rice is done, take half of it and pack it into the bottom of the dish, next layer half of sour cream mixture, then layer half of pepper jack cheese. Do this one more time. You should have two layers of each with pepper jack on the very top.
Cook in oven at 350°F for about 30 minutes or until cheese starts browning.
