12 sweet green chilies (If fresh, roasted and peeled. Hatch Brand canned whole chilies are excellent and much faster)
1 1/2 lb Mexican cheese blend, shredded
7 eggs
3 Tbsp flour
3/4 tsp salt

In a greased 9x13 baking dish, lay a layer of chilies. Cover with a layer of cheese, 1/4 inch thick. Cover with another layer of chilies.

Separate eggs. Beat whites until stiff, beat yolks. Stir flour and salt into yolks. Fold yolk mixture into whites. Spread over chilies.

Bake at 375°F for 20-30 minutes or until lightly browned.
