Preheat oven to 350 degrees F. On med high, heat vegetable oil in a large pan. Add whole chicken and brown all sides of chicken. Remove chicken from pan and save pan drippings. In a large oven proof pan (large enough to hold the chicken) put the chicken in the oven proof bag then in the pan.
To the saved pan drippings on med heat, add the packet of French onion soup mix and the flour stirring with a whisk to mix all together. Stir till the onion soup mix starts to get golden brown. [Don’t let it burn.] Then add the water and the apricot preserves. Mix till it is smooth. Stir in sour cream and mix well making sure all is mixed well. Pour the sauce over the chicken and seal the bag. Make three or four slits in the bag to let the steam out.
Place the pan of chicken in the oven and cook for 2 hours.
