Preheat oven to 350 degrees F. Grease loaf pan. In large mixing bowl, combine 1 cup of flour, sugar, baking powder, baking soda, and salt. Add mashed banana, shortening, and milk. Beat with a mixer on low until blended. Then, mix on high speed for two minutes. Add eggs and remaining 3/4 cup flour. Mix again until blended.
Pour batter into loaf pan.
Bake for 55-60 minutes or until a toothpick comes out clean. Cool for at least 10 minutes, then remove from pan and serve.
