1 1/2 cups rice
4 Tbsp EVOO (Extra Virgin Olive Oil), divided
Salt & pepper to taste
1 lg. onion, sliced or chopped
1/2 tsp sugar
1 lb of ground beef
1 can (12 oz.) sweet whole kernel corn

Prepare the rice to the bag's instructions. While the rice is cooking, put 2 Tbsp. of the EVOO into a frying pan with some salt & pepper. Slice or chop the onion and place into the pan to saute. Stir occasionally so they do not burn. When the onions are caramelized add the sugar. Move the onions into a large bowl.
Put the last 2 Tbsp. of EVOO into the pan, spread it around and place the beef into the pan. Stir the beef constantly so that it will not burn. Once the beef is crumbled and cooked through, drain the grease if any, and place the beef into the bowl with the onions.
When the rice is finished, fluff it up and place into the bowl with the onions and beef. Open the can of corn and drain. Place into the bowl. The heat of the rice and beef will heat up the corn or you can heat it up in the microwave for 1 minute. When everything is inside the bowl, mix it around evenly. Salt & pepper to taste.
