Toss chicken breast pieces with olive oil, garlic, and poultry seasoning. On a hot skillet, cook chicken until done (about 10-15 minutes).
Divide chicken into four servings in pan, and top each serving with a slice of cheese. While the cheese is melting, toast the pitas.
Spread each pita with mayonnaise and place the chicken with cheese on top. Add diced tomatoes and a dash of pepper. Serve.
