Preheat the oven to 350 degrees F. Rinse the beef roast off and pat it dry. Sprinkle lightly with salt and pepper.
Add the package of onion mix and a 1/4 cup of water directly to the top of the beef roast. Cover and bake for 2 1/2 hours.
Cut the potatoes into halves than fourths and wash well (Leave the skin on if you like). Add the potatoes to the dish and recover. Bake for an additional 30 minutes.
