Original recipe yields 1 serving
3 cups cut up cooked chicken
1 onion, chopped
1 pkg (6 oz.) wild and long grain rice
1 can cream of celery soup
1 medium jar diced pimento, drained
1 can sliced water chestnuts, drained
1 can sliced mushrooms, not drained
1 cup mayonnaise
1/2 cup sliced almonds (or more as desired)
2 cups French cut green beans, drained (optional)
Salt and Pepper to taste
TOPPING
2 cups Post Toasties Cornflakes, crushed
1/4 cup margarine, melted

Boil and debone whole fresh fryer. Measure 3 cups. Cook onion with rice according to package directions. Stir in all other ingredients.

Place in buttered casserole dish (9 x 13). Top with Post Toasties and margarine.

Bake at 350 degrees F for 30 minutes or until bubbly.
