Boil potatoes in the skins (don't over cook). Peel and shred.
Add cheese, onions, and sour cream. Refrigerate 2 hours or overnight.
Add salt to taste. Bake at 350°F for 30-40 minutes or until bubbly. Can freeze to use later!
