Put Velveeta, cheese soup, 1/2 cup cheddar cheese, milk into a medium saucepan and cook on med. heat until cheese is fully melted.
In a frying pan, cook the chicken strips and chopped onions until they are brown. Set aside. Add onion, chicken, and Ro*Tel to cheese mix and let cook about 20 minutes.
To serve, line the bowls with whole tortilla chips and crumble some in the bottom. Add soup. Then sprinkle each bowl with remaining cheddar cheese.
