Slice peppers, onion, and mushrooms. Saute in olive oil until slightly limp. Add tomato sauce, diced tomato bits with liquid, and tomato paste. Add Italian seasoning to taste.
Heat till boiling and then simmer for about an hour, but can serve as soon as hot.
Add cooked chicken breasts that have been cut in half and heat with sauce till hot.
