2 cups unsalted rice, cooked & cooled
2 cups chopped cooked skinless chicken
1 can low sodium peas, drained
1 cup chopped celery
1 cup green pepper, chopped
2 Tbsp finely chopped onion
3/4 cup low sodium mayonnaise
1/2 tsp pepper
2 Tbsp lemon juice
2 Tbsp chopped parsley
