Boil that carcass with an onion, celery, unpeeled head of garlic, and salt for about 1 hour to make a nice broth.
While the carcass is boiling, peel and dice your potatoes. Also dice the onion and jalapeno. Chop the cilantro coarsely. Remove seeds from the jalapeno. Saute the onion, jalapeno and cilantro in the olive oil and butter until soft.
Add the potatoes and the strained broth. Cook until the potatoes are soft. Add the cheeses to your liking and let them melt. Enjoy!
