Original recipe yields 1 serving
1 can orange-pineapple concentrated juice
1 1/4 cup cold water
1 box (4 1/2 oz.) Jell-O Vanilla Pudding (regular or sugar-free)
2 3/4 cup milk - regular, low fat or skim
2 Tbsp sugar or sugar substitute
1 can (8 oz.) crushed pineapple, drained
1 1/2- tbs p. cornstarch

Combine juice and water and set aside.

Fix pudding according to package directions. Heat 1/4 cup juice mixture with 2 Tbsp. sugar and add to pudding. Set aside.

Sauce:

Slowly combine remaining juice with cornstarch. Heat until sauce thickens and becomes clear. Fold in remaining pineapple.

Using parfait or drinking glasses, alternate layers or pudding mixture and sauce, ending with sauce. Serve at room temperature or cold.
