Spray cooking in spray in skillet and when hot, place tomato wedges cut-side down into skillet. Let brown for approx. 2-3 minutes.
Crack eggs onto tomatoes, evenly spaced and cover to let the whites get solid. Season with Italian seasoning. Add dollops of sour cream evenly around pan (about a tablespoon) and add shredded cheese until pan is covered. Cover again and cook until cheese is melted and edges of egg are slightly crispy.
Divide into 4 servings and serve with fresh baguette bread warmed in the oven.
