Easy Cheesy Shepherd’s Pie

Original recipe yields 1 serving
6 russet potatoes
1 cup milk
1/2 stick butter
1 package (2 cups) shredded cheddar cheese, divided
1/2 tsp salt (or more to taste)
2 lb hamburger
1 onion, diced
1 can cream of mushroom soup
2 cans corn

Preheat oven to 350°F. Wash and cut potatoes into cubes. Boil until soft. Drain. Return to pot. Add milk, butter, 1 cup of cheese and salt (add more milk for creamier texture). Mash potatoes.

Brown beef in skillet with onion. Drain fat from beef. Return to skillet, turn heat to low and add soup. Stir well.

Line bottom of casserole dish with beef. Drain corn well and layer on top of beef mixture. Sprinkle the rest of the cheese evenly over corn. Top with mashed potatoes.

Bake uncovered for 25 minutes or until peaks of potatoes turn brown.
