Preheat oven to 375°F. Set out butter ahead of time to soften to room temperature. Blend with peanut butter with electric mixer for 30 seconds. Mix in sugars, egg, and vanilla until thoroughly combined. In separate bowl mix flour, baking soda and baking powder. Gradually add this to the peanut butter/ sugar mixture.
Roll dough into 1" balls and place on ungreased cookie sheet 2 inches apart. Flatten with a fork making a criss-cross pattern.
Bake for 7 - 9 minutes or until bottoms are lightly browned.
