Brown and drain meat. After draining, add can of tomato sauce and taco seasoning. Fill empty can halfway with hot water, add to skillet. Simmer until thickened. Drain corn and add to meat mixture, remove from heat.
In a large non-stick skillet, add a tsp. of butter and allow to melt (do not let it brown). Drop in tortilla; add shredded cheese to middle of tortilla. Allow tortilla to slightly toast and cheese to melt.
Spoon in meat mixture and roll. Top with sour cream.
