2 1/4-1/2 in ch thick boneless butterfly pork chops, cut in half (4 pieces)
Salt and pepper to taste
1 Tbsp olive oil
2 large apples, sliced and peeled
1 small onion, sliced
2 tablespoons Dijon mustard
3/4 cup apple juice

Season pork chops with salt and pepper or whatever seasoning you like. Saute pork chops in olive oil until cooked through in a large fry pan. Remove pork chops and keep warm.

In same pan, add apples and onion. Cook until tender.

Add pork chops to pan. Mix mustard and apple juice together and add to pan. Cook until sauce mixture is hot.
