2 avocados, ripened
3/4 cup mayonnaise
3/4 cup sour cream
1/4 cup fresh lemon juice
4 anchovies, finely minced
1/4 cup parsley, minced
1 clove garlic, minced
2 tablespoons scallions
2 tablespoons fresh chives
2 teaspoon s dried or fresh tarragon
Salt and pepper to taste (optional)

Combine pitted, cubed avocado, mayonnaise, sour cream, lemon juice and finely minced anchovies in a bowl. Mince parsley and garlic and add to dip.

Thinly slice scallions and fresh chives and add to dip. Add tarragon or fresh tarragon. Salt and pepper to taste. Combine well (a cuisinart chopper works best).

Cover and refrigerate for several hours before serving with vegetables or chips.
