Cut chicken into bite-sized pieces. Mix oil, black pepper and garlic and chicken, tossing chicken in mixture. Let marinate for at least 30 min.
Preheat oven to 350°F. Mix bread crumbs and cayenne pepper. Bread chicken pieces with bread crumb mixture and place on a foil-lined cookie sheet.
Bake for 15 min or until done.
