Clean and slice carrots. Place in a 2 quart pan, cover almost with water and bring water to boil. Then turn down on medium heat and cook until carrots are tender.
Then drain all water and pour into a buttered 9 by 12 pan while still hot. Slice Velveeta cheese in slices and place over top. Then mash or crumble favorite crackers over top.
Place in a warm oven for 15 minutes at 275 degrees F. Then turn on broiler for very short time to brown crackers. Remove and serve warm.
