Grandma Linda's Sweet Potato Pie

Original recipe yields 1 serving
6 sweet potatoes
1 can (6 oz.) Carnation condensed milk
3 eggs
1 tablespoon lemon zest
1 tablespoon vanilla extract
3 cups sugar
1 cup flour
2 tablespoons cinnamon
1/2 cup Carnation evaporated milk
6 oz pie shell

Boil potatoes. Peel potatoes. Place in a large bowl with all ingredients. Mix well.

Preheat oven to 350°F. Bake pie shell until light brown (10-15 minutes).

Remove pie shell from oven and pour in all ingredients. Bake until golden brown (about 30-35 minutes). When done, remove from oven and let cool. Dust with powder sugar and serve.
