Add 2 cups of elbow macaroni to 4 cups of water. Add 1-2 tsp. of kosher salt to the water. Let them boil for about 12 minutes. When done, drain the macaroni. Run the macaroni under cold water right away. Put them into a big pot and into the fridge.
Next, dice onion and green pepper (the green peppers you use to make stuffed peppers). Drain the tuna fish. Get all your spices together in a bowl: freshly ground black pepper, parsley, oregano, Italian Seasoning, garlic salt, celery salt, paprika, and mayo.
You want your macaroni on the cool side. Add all items together and mix well.
