Original recipe yields 1 serving
6 pieces fresh cooked bacon, cut up
2 tsp canola oil
5 peeled cut potatoes into strips
3 cups leftover turkey
1/2 yellow onion
1/2 green and red bell pepper
1 tsp onion powder
1 tsp garlic powder
1 tsp red pepper
1 tsp Cajun powder
1 tsp black pepper

Cook bacon, set aside.

Put canola oil in pan, cook potatoes until brown, add turkey, onion, peppers, all spices.

Put on simmer for 20 minutes, cook until tender.

After cooked and tender, add bacon pieces, toss lightly, and serve with toast.
