Add onions on bottom of slow cooker. To prevent sticking, add water. Stir in seasonings. Add beef to mixture. On top of beef roast, add carrots.
Turn on cooker. Cook for 8 hours.
After 7 hours, start cooking noodles. Drain noodles and serve beef and carrots over the noodles.
