Original recipe yields 1 serving
1 can (16 oz.) crushed pineapple, drained well
1 can condensed milk (preferably Eagles but any one will do)
1/3 tsp lemon juice
1 pkg (8 oz.) cream cheese, at room temperature
1 cup chopped pecans
1 tub (8 oz.) Cool Whip
2 (9 inch) graham cracker pie crusts

Drain pineapple extremely well, squeeze in a hand towel or paper towels to get ALL of the juice out.

In a large bowl, add milk, lemon juice, cream cheese, pineapple and nuts. Mix well; fold in Cool Whip.

Pour 1/2 mixture into each pie crust. Refrigerate for at least 2 hours before serving.
