In a large bowl combine all dry ingredients. In another bowl combine bananas (mashed), add egg, oil, and vanilla. Mix well. Stir into the dry ingredients just until moistened.
Fill greased or paper lined muffin cups half full.
Bake at 375 degrees F for 18 to 22 minutes. Remove from oven and place on wire rack and let cool completely.
