Mix pineapple and juice with sugar and boil for 3 minutes on the stovetop. Add Jell-O and 2 cups boiling water to the pineapple mixture. Mix well and allow mixture to cool. Place mixture in the refrigerator and allow mixture to jell a little.
Remove and add grated cheese, or cheese cut into small bits, Cool Whip, and Pecans, or nuts. Cover with Saran wrap and chill overnight.
