1 cup confectioners' sugar
3 egg whites, stiffly beaten (please use an electric mixer)
1/2 cup crushed saltine crackers
1/2 cup chopped walnuts or pecans
1 teaspoon pure vanilla extract
1 package (6 ounce) semisweet chocolate chips

Preheat oven to 325°F. Grease a cookie sheet.

In a bowl, fold confectioners' sugar into stiffly beaten egg whites a little at a time. Fold in crackers, nuts, and vanilla.

Melt chocolate in a double boiler over hot water and allow to cool slightly. Fold into egg white mixture.

Drop by rounded half teaspoonfuls onto greased cookie sheet. Bake for 12 minutes. Remove cookies from oven. Repeat until all dough has been used.
