1 cup finely chopped green onion
1 cup finely chopped carrots
1 cup finely chopped celery
1/4 cup butter
1/4 cup flour
2 cups turkey broth or chicken broth
2 cups half-and-half
1/4 tsp salt
1/8 tsp pepper (white or black)
Dash of cayenne pepper
1 1/2 cups shredded sharp cheddar cheese (I use Kraft Old English sharp pasteurized cheese)
2 cups cooked, diced turkey

Saute chopped onions, carrots and celery in butter until soft but not brown.

Blend in flour, gradually stir in broth, and then half-and-half. Cook, stirring constantly until mixture thickens.

Stir in salt, pepper, cayenne, cheese and turkey. Heat just until cheese melts.
