Original recipe yields 1 serving
4 Tbsp extra virgin olive oil, divided
1 large filet salmon
1/8 tsp black pepper
3/4 tsp sea salt
Juice of 1 lime
1/2 tsp garlic powder
1/2 tsp lemon zest

In a glass baking dish, pour 2 Tbsp. of olive oil over the bottom. Put in filet of salmon skin side down. Add the others ingredients. Let fish marinate for 10-20 minutes.

Turn broiler on. When broiler gets to temperature, place fish in oven broiler 30 minutes or until fish just flakes.

Remove from oven and let stand for 5-10 minutes. Serve with sauteed spinach.
